GREEN THAI CURRY WITH PHEASANT

Older Cock birds can be used for this recipe as this dish does require a little cooking

Ingredients

Server four
2 cock pheasants (skinned)
2 tbsps sun flower oil
2 tins of coconut milk
1 small bunch of coriander leaves

Green Thai curry paste - Medium to Hot
Makes 180 Gms / 6 ozes
2 tsp coriander seeds
20 small Thai green chilli peppers
2 stems of lemon grass
3 tbsp galangal / ginger sliced
1 bunch sweet Thai basil leaves
6 kaffir lime leaves
30 Gms / 1 oz coriander root
6 cloves of garlic, peeled & chopped
60 Gms/ 2 ozs chopped shallots
1 tbsp shrimp paste
1 tsp ground cumin seeds
Salt & pepper
